Sandwiches - really fancy a delicious one ...

Inspired by the other thread on people not taking sandwiches for lunch, I now really want a sandwich. I can't get a good sourdough anywhere today but fancy a granary with "something" but what ?
Cheese and pickle was my first thought but "nice" cheese and maybe a fancy chutney.
I like carrot and hummus too but want a way to make my grated carrot a bit more...shredded and not soggy.
I don't eat meat so wouldn't be after a BLT or anything but really want a fantastic sandwich.
What can I have ? Are there any lovely ones I've not tried ? Probably. I've not had much bread of late and really really want some

I love pesto, mozzarella, and fresh vine cherry tomatoes, with a spicy honey drizzled over. I do add a slice of Parma ham sometimes but obviously not for you. In a pitta bread and in the air fryer for 1 min!

Key fur me is homey mustard. So delicious. I’ve also love cheddar with caramelised onion (Tesco sell it). I know you don’t eat meat, but a perfect sandwich for me would be mayo one side, honey mustard the other, ham, caramelised onion cheese, crunchy lettuce.

An omelette sandwich with omelette cooked in butter and loads of salt and pepper is an excellent thing.

I had a hangover yesterday and had scotch morning rolls with fried eggs, Linda McCartney sausages and HP sauce. Delicious.

My favourite cold sarnies are:

onion bhaji with lettuce, mango chutney and a little bit of minty yoghurt

the strongest cheddar I can find, with lettuce, cucumber, beetroot, sliced baby gherkins, sliced radishes- salad cream sometimes, but that depends on the bread and my mood

mashed egg, salad cream not mayo, watercress, very finely sliced celery, chilli jam - needs crisps on the side

Yes, tuna and banana together. Tinned tuna, not fresh. Much, much better than you would assume.

I am torn between wanting an air fryer toasted sandwich and a crusty roll cold sandwich. Maybe I'll have one for lunch and one for dinner. Am actually starving now

When I used to eat bread (sandwiches are dead to me now), my favourite type of roll was a crusty roll, that had been made into a cheese and pickle roll, with butter, wrapped in cling film and left for a while so the crust goes sort of soft and not flaky where you lose all the crust.

See also cheese and tomato, where the tomato is a bit warm because the roll hasnt been refrigerated. I HATE cold food.

You cannot buy rolls like that anywhere now.

People invariably make noises of disgust when I mention cheese & jam sandwiches but honestly OP they are the business! I sadly don’t own a sandwich toaster but you could just make the sandwich with toast. Extra mature cheddar with strawberry jam. I’m going to have one for brunch I think.

Mozerella and sun-dried tomato on toasted ciabatta or a nice crusty baguette, with a bit of fresh pesto?
Egg and cress is a classic. Has to be with cress though. Watercress isn't the same!

Chilli jam with cheese is fantastic, too.

A really, really good quality sandwich is hard to beat as a lunch option. You have made me want to get
one too, OP.

@RabbitsRock I love cheddar and jam too. All fruit goes with cheese and jam is fruit too.
@BlackAmericanoNoSugar I now have to try tuna with banana.

my suggestion is
peanut butter and marmite and mayo with a crunchy lettuce, tomato, cucumber, and as extra options onion, cheese. a good bread like granary.

@peafritterandcurrysauce After years of experimenting I can save you time by telling you that the right proportions for one bagel is half a tin of tuna mixed with generous mayonnaise, topped with half a banana. I cut the banana in half to make two long bits and then cut those lengthways into three long slices. If you cut it into rounds it takes longer plus they are more likely to fall out while eating. You're welcome. Grin

I really like cheese and cucumber, goats cheese and roasted beetroot, brie with chilli chutney and leaves.

Essentially I like cheese with a bit of something to add moisture / crunch. Avocado with chilli oil.

Old fashioned northern Irish salad sandwich (salad cream, onion or spring onion, tomato, egg, maybe lettuce) fresh granary or soft white salad roll.

It may be because I am Scottish so feel a culinary kinship to NI, but that sounds great. I might try that with some Heinz sandwich spread later this week.

Best vegetarian sandwich ever is onion bhaji and mango chutney with rocket or other lettucey thing and herbs if you have them (not essential, just a nice extra!). Will go with any bread.

Cheddar, soft cheese and very finely chopped celery is delicious.

M&S used to do that, didn't they? I took one from a work buffet, with low expectations because I would never have picked out in the shop, and it was delicious.

A simple tomato sandwich is hard to beat if you can eat it immediately. Vine tomato sliced, butter on the bread, plenty of salt and black pepper on the tomato, decent bread.
