Sandwiches - really fancy a delicious one ...

Inspired by the other thread on people not taking sandwiches for lunch, I now really want a sandwich. I can't get a good sourdough anywhere today but fancy a granary with "something" but what ?
Cheese and pickle was my first thought but "nice" cheese and maybe a fancy chutney.
I like carrot and hummus too but want a way to make my grated carrot a bit more...shredded and not soggy.
I don't eat meat so wouldn't be after a BLT or anything but really want a fantastic sandwich.
What can I have ? Are there any lovely ones I've not tried ? Probably. I've not had much bread of late and really really want some

with a good granary bread I make myself:
• ham, cheddar and pickle (with lettuce)
• roast chicken, avocado, carrotes râpées, and salad leaves. The carrot must be in thin matchsticks, not grated!
• cold roast beef, v thinly sliced but packed on, with horseradish or whole grain mustard, butter head lettuce, quick pickled fine red onion, thin slice of tomato, and a big gherkin on side

I bloody love a proper sandwich!
EDIT: Sorry, totally blanked out the fact you don’t eat meat! What about a good cheese (Wensleydale? Cheshire?) and beetroot… The type that comes in the packets already cooked or whatever it is. Delicious with a sprinkle of sea salt and freshly cracked pepper!

Good bread, full fat cream cheese and watercress

Red Leicester and lime pickle (Indian pickle)

Squashed felafel, thinly sliced red onion, sweet chilli sauce

Roasted veg, mozzarella

Tesco used to do a fantastic vegetarian new york deli style sandwich. I'll see if the recipe is online

Lose the bread. Cheese scone, cream cheese, onion chutney. Like jam and cream, but savoury.

@Gasp0deTheW0nderD0g now you mention it, yes I think M&S do/did cheese and celery on granary bread. My first time was homemade but I have since had the M&S version.

I also love tuna, mayo and celery. It's the crunch you get either the cheese or tuna sarnie that takes to another level.

Another veggie favourite is crunchy peanut butter and tomato or cucumber on toast. Optional extras are marmite and cheese. Can melt under the grill. Would make a good sandwich too I'm sure.

There's definitely a crunchy theme going on with my favourites.

There used to be a posh sandwich place in Birmingham, in which I had my first ever taste of avocado. Granary bread, with a filling including avocado slices and cashew nuts, but I don't remember what else. It was lovely.

Oh now I'm craving a carrot & hummus sanga but don't have either in😩

I've been going through a peanut butter and Aldi jalapeno jam stage recently.

Also love an open sandwich with toasted bread, hummus, crumbled falafel, pickled pink onions or radish, crumbled feta, hot sauce and Crucial's yoghurt & mint drizzled over the top. Nyom.

It may be because I am Scottish so feel a culinary kinship to NI, but that sounds great. I might try that with some Heinz sandwich spread later this week.

Old fashioned northern Irish salad sandwich (salad cream, onion or spring onion, tomato, egg, maybe lettuce) fresh granary or soft white salad roll.

Also a Scottish one, love salad cream, reminds me of childhood pieces.

Hard boil some lovely eggs if you eat them. Real mayo. Good butter. Fresh cress. Salt. It's gorgeous compared with the ready made ones.

@peafritterandcurrysauce After years of experimenting I can save you time by telling you that the right proportions for one bagel is half a tin of tuna mixed with generous mayonnaise, topped with half a banana. I cut the banana in half to make two long bits and then cut those lengthways into three long slices. If you cut it into rounds it takes longer plus they are more likely to fall out while eating. You're welcome. Grin

My absolute favourite sandwich is seeded or granary bread (preferably Bird’s Bakery poppyseed), butter on one slice, round lettuce, sliced extra mature cheddar, sliced tomatoes, salt and black pepper and a thick tomato chutney (I like Baxter’s) on the other slice of bread. Simple but tastes amazing
