No inspiration and I have run out of ideas.

We had curry last night.

I have a cauliflower in the fridge.

What are you having and what should I buy in Tesco later?

Roast Chicken with jackets and salad (that was the initial plan) but the sun’s now gone so might do a proper roast.

verycloakanddaggers · 05/05/2025 12:20

Falafels in tomato sauce. New recipe, fingers crossed!

Snackpocket · 05/05/2025 12:21

Halloumi salad and crusty bread.

pizzaHeart · 05/05/2025 12:29

We have leftovers of duck from yesterday so im planning to do butternut squash risotto to go with it. Mashed potatoes would be better but it’s so cold and gloomy not sure I could bring myself to go out to the shop.

@DtotheOG you can add cauliflower to the chicken, squash and chorizo tray bake and then use it up tomorrow for lunch. Roasted cauliflower is really nice cold.

DreamedTheSweetestDreams · 05/05/2025 12:30

Tomato, chickpea and spinach pasta.

I’m doing harrisa chicken with homemade flat breads, a roasted veg, giant cous cous and pomegranate salad, apple slaw and mixed salad.

Oh, I want YOUR dinner! Sounds amazing.

GETTINGLIKEMYMOTHER · 05/05/2025 12:37

Leftover roast chicken (plenty) heated through in gravy (part proper homemade, part Bisto Best*) new potatoes, lots of veg - green beans, carrots, cauliflower.

*Used to think I’d never use the stuff, but there you go…

Justlovedogs · 05/05/2025 12:40

Aldi smoky barbecue ribs, oven roasted Mediterranean veg and corn on the cob here. I'll pop out to Sainsbury's in a bit to get a loaf of fresh crusty bread to go with it. 30 mins, all done and ready to eat.

Chicken and chorizo jambalaya. Very tasty and probs not the healthiest but feels right on a bank holiday Monday

ShapedLikeAPastry · 05/05/2025 12:42

DH is out tonight so I'm having girl dinner from fridge pickings. Hard-boiled eggs, cheese, pickled beetroot, cornichons, kimchi, green salad. Then probably greek yog with berries and seeds. And maybe some chocolate!

DtotheOG · 05/05/2025 12:53

Some excellent suggestions here!

One of my favourite meals: baked sweet potato with caramelised onion and chopped chorizo with salad. I make enough onion/chorizo to have it with an egg next morning for breakfast. Sooooo good!

SquigglePigs · 05/05/2025 12:56

We're having chicken quesadilla with salsa, guacamole and sour cream.

EineReiseDurchDieZeit · 05/05/2025 12:59

I’m making a Prawn Curry later

theriseandfallofFranklinSaint · 05/05/2025 13:12

We're having a 'ticks the boxes' tea tonight.

Basically, meat (sausages) potatoes and veg after a very fruit and veg-free weekend...

Tarkan · 05/05/2025 13:18

It’s our anniversary today but DH is working nightshift so nothing special tonight. It’ll just be me and DC2 for dinner as DC1 is away for a gig with her boyfriend, so I might just treat us to a takeaway or maybe go out to Spoons or something.

iamme21 · 05/05/2025 13:21

Mexican chicken stew

Oldraver · 05/05/2025 13:23

Probably some picky bits as just got back from a night away and hdd a Wetherspoons breakfast

TheWatersofMarch · 05/05/2025 13:23

Fish pie with salmon and smoked haddock; green beans, peas; rhubarb cobbler, home made custard as there’s cream to finish.

Middlemarch123 · 05/05/2025 13:25

I’m making chicken biryani in the slow cooker, with naans. Smells lush.

Ooooh - do you have a link? I have chicken breast in the freezer along with butternut squash and some chorizo lying around some. A tray bake sounds good. I can’t be bothered to cook much today.

Sure! Here you go https://www.bbcgoodfood.com/recipes/roast-chicken-butternut-squash-chorizo-chilli

It says to use a whole chicken but we are doing thighs, I’m sure breast would work too!

Thank you! Tesco have had a run on chicken and the only thing I could get was chicken thigh fillets. Might have to have a rethink.

Slow cooked pulled pork tacos with pineapple salsa and avocado, just got the pork in in the oven, should be ready by 6 fingers crossed.

Spooky! We’re having pulled pork and pineapple salsa too. With herby new potatoes.

butterfly0404 · 05/05/2025 15:03

Spaghetti and nice meatballs in a homemade tomato sauce, lots of parmesan
