Is there such a thing? I would like to drink something cool in the evening, which is all of these things. What do you drink?I like iced tea but not without sugar.

I was going to say iced tea.
It takes some getting used to without sugar but I couldn't drink it with sugar now.
I make my own and have a container of it in the fridge

Yes, this. You can put fruit or mint in it for flavouring. Or use fancy tea that is already flavoured.

I typically use carbonated water and just a tiny bit of simple syrup but I think this would still be good with still water and no sugar at all.

muddle fresh strawberries with balsamic vinegar. Top with ice water.

Tastes like Pimms!

Hydrogen Dioxide for definite

Hydrogen dioxide? H2O2 (usually called hydrogen peroxide) is not for drinking, people. Stick to your dihydogen oxide and you’ll be grand.

I was going to say this. Unless the OP is drinking the first fermentation - which most people don’t and I’ve never seen a commercially available F1 - then kombucha is fizzy. And even the F1 has a bit a fizz when you stir it.

I have made my own in the past, but I understand you can't drink that much of it at once. I had to throw my scobie away as I was away such a lot when my dad was dying and it turned black! So I need to get back into it.

I hav two scobies (one a daughter of the other) and two big kilner jars and make a batch of just over 2l roughly every 6 days. I drink about 300ml a day which lasts me more or less until the next batch is done. It keeps well and becomes fizzier (you need to burp the bottles). It is a good idea to build up gradually to give your body the chance to get used to it, but starting with one scoby produces a smaller volume which you can build up naturally as the scoby grows.

You can also continually brew which basically means every time you drink some you top.up the container with an equal volume of cold sweet tea, but you nead a special jar with a tap for that and I haven't got one yet.

True - though I'm not sure why the OP is trying to avoid carbonation and she may be ok with the natural fizziness of kombucha, particularly from the first fermentation as you say.

What do you do when you go away? I'm scared of bottles exploding!

If you put the bottles in the fridge, that should stall the fermentation. And use round bottles not square ones if you’re using glass bottles because the edges can be a point of weakness. I’ve also seen people store the bottles in a cold box (not chilled) just in case. I’ve never had a bottle explode on me though - even when left way too long at room temperature.

The main brew shouldn't be sealed so exploding is only a risk for the decanted kombucha. But you can take the seals off the bottles so the pressure can escape and/or store in the fridge to slow fermentation.

The other issue with going away is that beyond a week or so the brew starts to go really vinegary. Scobies do not like refrigeration, but you can just give the scoby enough tea to stay alive until you come back.

Homemade, unsweetened ice tea, with a slice of lemon.

BlueandWhitePorcelain · 03/05/2025 08:50

I had a fantastic raspberry tea in a Polish cafe! Raspberry tea with a shot of raspberry cordial, fresh raspberries, star anise, and maybe a few other things floating in it. I’ll have another look next time. Mine was hot, but it could just as well be drunk cold.

Loving this thread..
I don’t drink alcohol and also don’t want to drink something that’s so full sugar it makes my teeth fur up!
I know you said you do t want carbonated but for anyone else out there like me..Tripp is gorgeous as is Aqua Libra in cans.
I’d love to find a non-alcoholic Pimms!

JaneFondue · 03/05/2025 11:45

Thanks all. Ordered some coconut water to begin with. I don't like fizzy drinks just because I don't like fizzy drinks. No particular reason.
The watermelon muddles also sound good. Ice tea without sugar doesnt tsste good to me but maybe I can get used to it.
