Breakfast at the Trafford Centre

I'm going to the Trafford Centre next week for a John Lewis style consultation to help me find some clothes for my new job, a little shopping trip to celebrate finally getting a promotion, and it's my birthday too.
The next day I'd like to have a nice breakfast there, I'm trying to use the website but can't seem to find a list of the restaurants, does anyone have any recommendations?
I'd like either
a nice vegetarian full breakfast
or
a massive huge giant waffle pancake french toast monstrosity with fruit and caramel and cream and pistachios and rose petals etc etc.

There is a food court, nothing amazing from memory.

There’s Bill’s. Not quite in the Food Court - it’s opposite Ted Baker I think. It’s a chain though but think they’re all chains but they do pancakes and full English breakfasts and the ambience is nice - lots of antique chandeliers and wood.

There must be an M&S there with a cafe surely?

Yeah I think so. But I can’t think of anywhere there that would do a nice breakfast.

Thank you, yes I know it'll be something from the food court (which from ancient memory is massive? and weirdly ornate??) I just wondered if anyone knew anywhere nice.
I usually don't go to big chains so don't know who does what. I've not heard of Bill's but it sounds like a viable option.

blancheflower do a nice breakfast at their Altrincham branch so I presume will do the same at their Trafford centre.
