In a static caravan right now

have turned bathroom light off and got into bed, but the extrator fan in the bathroom is still going 15 mins later - WHYYYYY?????

This could be because the humidity sensors are detecting too much humidity, so the fan will keep running until this reduces. We experience this in our in-law’s caravan.

Is the door open? Will shut off quicker if it's shut.

Is it a pull cord?

If so, pull it again.

Mine is one slow tug for it to stop when the light goes off and two tugs in quick succession for it to stay on for about 15/20 mins after the light goes out.
