It’s Friday and I have chicken in the fridge. Help a girl out.

Please kind Mumsnetters.

I’ve hit the wall. We can’t get a take out (v.rural) and I have to use a pack of 2 chicken breasts for 2 people.

My cupboard/fridge is well stocked but I’m out of ideas. We’ve had pizza and pasta this week.

Hit me with your go to dinners. I haven’t joined the cult of the air fryer 😂

Stuff with garlic and cheese, wrap in bacon and stick in the oven for 25 minutes. Have some sort of spud and veg with it.

Season then Pan fry with a bit of lime juice (fresh or bottled) sliced chilli’s, microwave a packet of rice. Thinly slice chicken and put on rice. Have you any sweet chilli sauce? Maybe chuck in sweetcorn and peas into rice?

Marinade in harissa, cumin, olive oil, salt and pepper.

Traybake with new potatoes cut in half, two leeks sliced into half moons - toss these with olive oil, salt & pepper and the zest of a lemon. Any other veg you have will work too - courgettes, aubergine, peppers... just cut into cubes about the same size as the potatoes.

Put the veg to roast at 200c in for 10 mins, then add the chicken breasts for the next 15 mins.

Mix some Greek yoghurt with the juice of the zested lemon, a grated garlic clove and season.

To serve, one chicken breast and half the veg each, dollop the seasoned yoghurt on top, and sprinkle with as many green herbs as you have - mint, coriander, parsley, dill all work well!

Wow! You guys are quick. I don’t have Harissa but I can make a kind of marinade.

Chicken on nice roast veg but probably with rice on the side as I’ve no new potatoes sounds just what I need.

Let it out, it's getting cold and would much prefer to be out on the back garden pecking around for bugs etc.

I'd chop the chicken into chunks and make up kebabs with that and mushrooms and peppers, drizzle with olive oil and chilli or any herbs lying about.
Then have with rice/cous cous and salad.

Ideally sat outside with a glass of something nice....

I love that (having it tomorrow night)... specially nice with Stilton stuffed in the middle of the breast along with some sundried tomatoes in oil, wrapped in bacon. Yum!

I just wrap it in bacon but yes it does ooze out! I used to use cocktail sticks to close the gap but dont bother now!

I just scrape up any ooze from the dish and add on top.

My most used version is brie, garlic paste and a few spinach leaves. Parma ham/prosciutto works instead of bacon if you have that in.

I’m seasoning flattened chicken breasts with Cajun seasoning, starting them off on the hob to seal, then bunging them in the oven & chips in the air fryer and doing Cajun chicken burgers.

How do you slice a leek into a half moon please? That's the bit I'm most interested in.

Cut the leeks in half lengthways so you have two long half moon shapes, then slice those to the required thickness.

Gyros? If you have the spices , mint sauce, yoghurt cucumber for tzatziki and flat breads or pitta? It’s what I’m having and can’t wait!
