What do you usually have for dinner?

I’ll go first, it’s a mixture of different dishes on rotation. We like to cook so they’re pretty much all made by us, chilli, fish and vegetables, chicken or lamb curry, veggie pasta etc.

Just wondering what everyone else has and probably a bit of inspiration. :)

Tofu scrambled into pasta with a spicy sauce/marinade

Vegan Spag bol

Vegan Chill

Jackets + topping and salad

Baked sweet potato with roasted chickpeas and a hummus and lemon dressing, with salad

Pesto pasta with loads of green veggies

Red lentil curry

Vegan sausage casserole (it's made with mixed beans in a tomato&stock based sauce with various herbs etc), served with crusty bread

Budda bowl, usually something like rice, pickled cabbage, aubergine in a Chinese style dressing, nuts, strips of baked tofu, etc. We use whatever leftover veg we have really!

Homemade wedges, black bean burgers, whatever veg we have

Pasta bake

Stir fry with tofu and sweet chilli peanut sauce

Pasta salad, so pasta with a tin of mixed beans, walnuts, pepper, cucumber, tomatoes, in a balsamic vinegar based dressing

Potato, mushroom and leek gratin

I like soups in winter.

Days when I CBA are usually stuff like beans on toast, or homemade wedges, mushy peas, some vegan fish to throw in the oven, etc. I try and eat a good variety to share with my 10 month old!

All home made most of the time
Thai green curry (I make the sauce from scratch) a chicken and tempeh version
various Indian curries and dahlls with side dishes, breads and rice
falafel with breads, tahini sauce, chili, salads
full roast dinner
oily fish, garlic new potatoes, greens
home made everything pizza
various Middle Eastern rice/salads with chicken
Greek salads with lamb
Caribbean street food inspired
Mexican - this is a weekend thing it takes over 24 hours to prep
variation on a ploughman’s
smoky paprika Louisiana sausage dish
home made burgers and buns with side dishes and salad
quiches/baked eggs
chinese noodles
pies with mash greens veg (will admit I buy ready made pastry)
feta/spinach filo
toad in the hole
risotto
chilli
spag bol
brunches in the evening

trifle
apple pies
Black Forest gateau
not quite as big on desserts

I will happily shove in oven chips, breaded fish and a tin of mushy peas
eggs chips and beans

I am bought Raman noodles today so plan to master Raman bowls this spring
there are many South American dishes I have yet to attempt
we love good food
but I soak a lot of beans

Go through phases. Try to have salmon in some form once a week. Really into Moroccan lamb steaks with vegetable cous cous atm. Really quick to make. Depends on the weather. As it gets warmer we do a lot of BBQ dinners, salads and chicken / homemade burgers etc.
