Leftover coriander

Exciting, I know. I buy a bunch from the lovely Indian spices shop down from me for less than a pound, use some in my curry and then the rest goes to the waste. What could I use it for to reduce waste?

You can freeze it and use as and when.

Chop and freeze in ice cube trays

Or make carrot and coriander soup

Chop it and put in an ice cube tray with olive oil.
