Symptoms - Can anyone help?

Apologies for writing this in the wrong area, but I am hoping I get a bit more traffic here.
I have been having quite a few symptoms for quite a while now. Not sure if they are linked or not, but I am really trying hard to get to the bottom of what this is. I am 40, female,1 child, mirena coil in (due to periods being all over the place)

Terrible IBS - I have had this for years, but seems to worsen and I get "flare ups" (where a few times a month I suffer fecal incontinence), other times its horrendous constipation.
During the flare ups, I am very prone to cold sores and feeling generally run down even though I am sleeping well, minimal stress etc.
Very much struggling to lose weight, now obese (BMI 32) and all my weight is on my tummy. Tummy is really big - not always bloated or anything, just a lot of fat! Really struggling to lose it.
Sore face/skin. Not always. Cheeks are currently bright red and almost look sunburned (they are definitely not sunburned). This normally doesn't last longer than a day or so at a time. Skin on my back also often achey.
Very prone to injury, cramps.
Hair looks shit! Although I'm taking collagen to try to fix this.
Possible hiatus hernia - burping etc
Pulse is on the lower side of normal - Resting between 50-60bpm. Has dropped into the 40s when I'm really exhausted.

I'm exercising when I can, and enjoying it, but struggling to do as much as I would like.

FWIW GP have done "full bloods" (not 100% sure what this entails, but apparently everything is fine, Coeliac bloods included in this and were negative but I am definitely gluten intolerant and don't eat it - although I did for a couple of months prior to the blood test). I've had a Q-Fit test and stool sample sent off - all normal. Last smear a few months ago - normal (and all previous ones are also normal). GP did a physical check of my back package - appears normal. Currently on the waiting list for a colonoscopy. GP also had a feel of my abdo - no concerns from here.
I got my first coil in when I lived abroad around 15 years ago. (I've obviously had that one removed and another one in since then in the UK). There they always did a scan and said I have some cysts on my ovaries, but they said it wasn't PCOS as I didn't have other symptoms. I am wondering if that has changed now. I'm actually wondering about inflammatory PCOS.

I'm just getting desperate and thought I would check if anyone had any recommendations of what this could be? Or what further tests I could ask for?

GP has been lovely, but I feel like there is only so much I can discuss during a 5 minute appointment.

This sounds as though it could be lupus, an autoimmune condition.
