Coronation...?

CorragMacDonald · 15/02/2025 18:57

I've recently stopped eating meat and want to avoid eating lots of fake "meat" alternatives.

One thing I really miss is Coronation chicken on a baked potato... what else would work with the sauce?

Open to other veggie friendly topping suggestions too 😁

I have seen coronation chickpeas! Or maybe tofu?

ComtesseDeSpair · 15/02/2025 18:59

This coronation chickpea recipe is good, has a nice bite: https://boldbeanco.com/blogs/beanspo-recipes/corination-chickpea-sandwich?srsltid=AfmBOoonh46RoXIIyGjYgEuDfZz62lVSG-SrFsDhxxR4OKVl47waxsOS

If you still eat fish then canned tuna or mackerel go really well with coronation, too.

Double fried tofu.

Replace Chicken with Mushrooms?

CorragMacDonald · 15/02/2025 23:40

I haven't eaten chickpeas in years as they brought me out in hives!

I love mushrooms but not sure hows they'd work for this, have you tried it?

I've never had tofu, maybe I'll give that a go, thanks!

Tofu or paneer should work nicely, or jackfruit for the stringy texture.

Hortus · 16/02/2025 00:33

I have to say I have tried making coronation chickpeas( I like chickpeas) , but it was disgusting, the chickpea texture simply isn't right with the sauce when you associate chicken with the recipe.
A very good recipe which has a slight coronation sauce flavour which works well is Mary Berry's coronation coleslaw, that is very tasty. I imagine it would work well with a baked potato with lots of grated cheese.

CutOffTheThorns · 16/02/2025 00:41

Tofu, tempeh and jackfruit are all great for this.

Halloumi

mathanxiety · 16/02/2025 01:34

I was going to suggest halloumi. I've had this and I loved it.

Paneer would be nice too, per PP.

If you like quorn chicken, I made an amazing batch recently.

OP literally said no fake meat!

I was going to suggest coronation slaw as per PP. I love coleslaw on a baked potato though.

CorragMacDonald · 16/02/2025 08:08

Oh, coronation slaw seems like a good shout! I love coleslaw on my baked tattie anyway.

Jackfruit would have the right texture too!

Thanks everyone ☺️

To PP who said Quorn - I've never had it, and I'm trying not to go down the route of relying on it but maybe good in a pinch for packed lunch or something, thanks!
