Coronation...?

I've recently stopped eating meat and want to avoid eating lots of fake "meat" alternatives.

One thing I really miss is Coronation chicken on a baked potato... what else would work with the sauce?

Open to other veggie friendly topping suggestions too 😁

If you still eat fish then canned tuna or mackerel go really well with coronation, too.

I haven't eaten chickpeas in years as they brought me out in hives!

I love mushrooms but not sure hows they'd work for this, have you tried it?

I've never had tofu, maybe I'll give that a go, thanks!

Tofu or paneer should work nicely, or jackfruit for the stringy texture.

I have to say I have tried making coronation chickpeas( I like chickpeas) , but it was disgusting, the chickpea texture simply isn't right with the sauce when you associate chicken with the recipe.
A very good recipe which has a slight coronation sauce flavour which works well is Mary Berry's coronation coleslaw, that is very tasty. I imagine it would work well with a baked potato with lots of grated cheese.

OP literally said no fake meat!

I was going to suggest coronation slaw as per PP. I love coleslaw on a baked potato though.

Oh, coronation slaw seems like a good shout! I love coleslaw on my baked tattie anyway.

Jackfruit would have the right texture too!

To PP who said Quorn - I've never had it, and I'm trying not to go down the route of relying on it but maybe good in a pinch for packed lunch or something, thanks!
