Career change at 40

Hi I've never had a career due to mental health issues and continual job drifting. But most of the experience I have is in customer service in call centres and basic office work. I am torn between training as a pharmacy technician and a conveyancer.

Becoming a pharmacy technician involves a 2 year apprenticeship so wages will be roughly £1000 a month. Whereas a job I've seen for a trainee conveyancer works out paying about £1600 a month after tax. And the company will only pay for you to do qualifications after you have been there for at least a year. I wonder which job will be less stressful and which one has the better prospects in the future?

I am no expert but I would have thought pharmacy would offer more long term prospects as basic legal services are getting replaced with AI.
