When did you last have soup

I think about two weeks ago I had an instant soup. They're okay but they are so salty and watery - i.e. in lacking in flavour, not "thin" - that they don't feel like "proper" soup. Can't remember when I last had proper soup.

Think I might make some cock-a-leekie this week.

When did you last have soup?

Yes, that sort of thing. Empty powder from sachet into mug and add boiled water.

That's not really soup though. It's just a sort of chemical broth.

It's soup in the way that instant coffee is coffee. It will do, at a push, but it isn't the real thing.

I love soup but DH is fussy so we only have it when he fancies Scotch broth/leek and potato (we both cook). Left to my own devices I'd run riot with tomato and rice, celeriac and almond, stilton and broccoli . . . What he doesn't know is that what he thinks is my unique vegetable stew with pasta is actually a slightly cornflour thickened minestrone soup (because he "doesn't like minestrone soup"). I despair!

Today. Homemade sweet potato and butternut squash.
I love soup and have it for lunch most days, either home made or from the chilled section in the supermarket. I like the Bol power soups particularly.
If I could only live on one type of food forever it would be soup for sure.

Yesterday! Made a very quick chorizo, chickpea and cavolo nero soup for lunch. It's delicious and takes about 15 minutes.

Thursday - I always treat myself to a solo Pret lunch on a Thursday, and currently am eating my way through their soups. This was a “green soup” and very nice.

On Monday both DP and I were WFH so we had home made carrot and coriander soup from the freezer.

I make soup every couple of weeks - usually leek and potato, carrot and coriander, or butternut, sweet potato, and red pepper. My stick blender is one of my favourite gadgets!

Last week. I make soup all the time - last week it was roasted pepper/tomatoes/carrots/red onion/chilli. Very nice 😊

Probably when I was last on holiday, love a soup starter when I'm abroad and the flavours are usually different to the usual in UK with the added bonus of loads of fresh herbs.

Last week, a vat of lentils and veg with loads of spicy seasonings. Ate over 3 days. Cheap, filling and nutritious.

2 tins of lentils
Whole bulb of garlic
3/4 shallots or onions
1 leek
3 carrots
Tin of tomatoes
3 sticks of celery
Pepper
Chilli flakes
Tomato paste

Spray a large wok or casserole dish with oil. Fry off chopped veg. Add everything else and cover with water and a vegetable stock cube or stock pot. I sometimes use chicken broth too. Simmer for 20 mins for so. I like to use a stick blender for a smooth soup. Serve with crusty bread.

I have a soup maker and but things like butter beans or fresh cubed veg as a base, add stock, wine, sometimes meat and/or other veg and flavourings like chilli or herbs, garlic, onions etc
I love my soup maker!

Put a can of chopped tomatoes and a can of water into a pot and bring to a simmer.

In the meantime chop 100-120g of mild chorizo and shred 150g cavolo nero (or savoy cabbage). Open a tin of chick peas and drain.

Add to the simmering tomato along with a 1/4 teaspoon dried chilli flakes and a chicken or veg stock pot. Once back up to boiling, simmer until the cabbage is tender. Season with plenty black pepper and salt. Serve.

Have t made soup for ages. If I am ever down, anxious or ill I have a tin of Heinz tomato soup with cheese on toast. My absolute comfort food.

I make soup at least twice a week. This week was broccoli cheese, last week was cauliflower and bacon.

I live in a tropical climate too but you can't beat an easy soup for dinner!

I just use whatever’s knocking about in the fridge really! So leek and potato might be:

A leek
A few sticks of celery (I don’t get on with onions so try to leave them out)
Two large baking potatoes that are just about to sprout, or a load of small ones
Acouple of garlic cloves
All chopped (potatoes peeled) and cooked off in olive oil, then add black pepper and smoked sea salt, two vegetable stock cubes. Top with boiling water, simmer for about 30 minutes, blend. Might add some cream if any is open and needs used but fine without.

I freeze coriander so if we ever have carrots that need used I can just pull that out for soup. Method much as above.

For butternut/sweet potato/red pepper I tend to add a tin of coconut milk as well as stock, and season with Turkish pepper flakes and a wee pinch of chilli flakes as well as salt and pepper.

I love soup, but don’t have it very often for some reason. Maybe I been a soup maker.

All time favourite is samosa soup, and the one I made last. It is amazing! So warming, comforting and tasty.
