Microwave rice

Bit of an odd one.
When I make rice I only make it for DD who will eat half the packet (she doesn’t like pasta so has as an alternative). I get the microwave bags usually Asda or Sainsbury’s.
But I am aware and extremely paranoid about food poisoning that you cannot reheat rice, is there a way I can use a microwave bag of rice for two consecutive dinners?

I often use these for my daughter but I fry the rice instead of microwave it and only use half a pack at once. She likes it thrown in a frying pan with peas and sweetcorn and then an egg scrambled in!

I just pour half out, heat it on the plate. Then save the other half and use the next day?
Reheating rice is actually fine anyway. As long as it's piping hot. You just shouldn't leave it out at room temperature, so those packets just need to go in the fridge when opened.

Why not just cook the amount of rice you want in a pan of boiling water? It's so easy (and I am not a good cook).
It would never occur to me to cook rice in a microwave, tbh.
