A nice discovery about cake, and a cautionary tale

  1. You can improvise a very decent jam and coconut sponge by spreading some raspberry jam on a fairy cake or madeleine and then dipping it in some dessicated coconut.

But:

  1. Do make sure that what you are spooning from is a jar of jam, and not a jar of Italian tomato sauce.
