Handwriting to text converter or tablet?

I was at a conference recently and sat next to a woman who had a tablet, she was handwriting with a tool and it seemed to be converting to near perfect text. I'm an avid note taker and need to produce all sorts of plans and charts at work. I wish I had asked her what she was using, does anyone know what I mean? How do you do this, and is it possible without the technology costing the earth?

I can do that with my remarkable paper tablet. It was £420 and worth every penny!

My teenager has an Apple Pencil which does this. I only paid £100 for it one Black Friday but obviously she needed the iPad too.

Yikes. It would have to do a lot for that kind of price!
