If you're approaching a junction and there's only one lane, should you be positioning your car to the left or the right depending on which way you are going?

Or is it ok to approach the junction, stop and then use your indicator to indicate which way you're going?

All the while remaining on your side of the road within the white lines and not encroaching on the other side

No. You should be checking your mirrors then indicating as you approach the junction and then stop, not wait until you are actually stopped.

Yes, but only when you’re out for a sleep drive.

I couldn't remember if I wanted to go left or right, I wanted to look first

Re if you are positioned correctly was it because of someone turning in or because of another vehicle trying to come alongside you and say turn right because they thought you were turning left?
Either way, it’s not really on to pull up to a junction to have a look. You need to use a satnav or maps app, rather than cause danger to other road users because you don’t know where you are going and they are having to guess what you are doing. I mean we can all make mistakes but it sounds as if yours was avoidable.

That's ridiculous though

Satnav hasn't always existed

I can't approach a junction stop and then indicate which way I'm going? That's considered dangerous? Why is that dangerous??

What's going to happen?

Also this narrative of everyone needs to know exactly where they're going 100% of the time and never get lost

Well it's just ridiculous and not realistic

Both scenarios are fine OP. Some people position themselves in the middle even if they approach the junction with indicators on.
