How to stretch a chicken?

Yes yes I know lots of people make a chicken last a whole week. I’ve cooked one - how can I now make the most of it this week? Guessing dinner today? Make stock with carcass - how?! What other things can I do to minimise wastage.

We usually do:
one meal where chicken is a key ingredient - eg roast
one where the bigger leftovers get used with lots of other things eg curry with veg or pie with mushrooms and leeks (could also do some kind of pasta or risotto)
chicken noodle soup with stock and any final scraps

But agree - supermarket chickens are full of water and don’t stretch very far vs the fancy ones.
