Hope everybody's had a good Christmas and eaten some delicious food, but what's the best thing you have eaten?

My roast potatoes on Christmas day were absolutely perfect, I'm still dreaming of them now! 😆

I've had a rotten cold since the 23rd. So couldn't taste any of my dinner or anything at all till today. So a dodgy tomato bread wheel pastry thing from the coop tastes devine right now!

My homemade stuffing on Christmas Day was blooming lovely - if in do say so myself!

M&S camembert surrounded by garlic bread was yummy.

I got sick of Christmas food and cooked Mary Berry’s lamb rogan Josh last night, that actually was the best meal I’ve had all week! Made it with beef though as lamb was very pricey.

Had hot feta and honey balls from Aldi’s party section on Christmas Eve though and they were very nice.

My DH always gets them perfect and crispy/crumbly by completely boiling, rather than par boiling before tipping them into hot beef dripping and sprinkling with a bit of salt.

I think he turns them halfway through cooking too?

I did a decent Christmas dinner this year and everybody at the table said they enjoyed it - however my favourite this was my homemade "Christmas pie" i made yesterday for Sunday lunch.
I use up left over turkey/stuffing and any pigs in blankets and make a white sauce. Bung it all in a shop bought pastry pie. Delicious.

Use the right potatoes!
King Eds are my preferred ones from supermarket.
I boil them until they're nearly disintegrated, pour into colander, let the steam dry off and rough up (toss them about in colander) any that are still whole and tip the lot (bits and all!) into a shallow roasting tray that has your fat of choice (it was butter with a glug of olive oil) that has been in the hot oven for about 5 mins.
Season then roast on high temp and don't shake the pan until you can see golden brown crispy edges.
Sooo good when all the star(ch)s align 😅
Deliciously fluffy inside but so crunchy on the outside!
Want some now.

My instant reaction was 'marmite on toast'

being low carb for medical reasons, I can't usually eat toast & keep my diabetes under control without medication and one if things I miss THE most is marmite on toast. Food of the Gods.

But bloody lovely as well were the absolutely fabulous roast potatoes my 18yo Godson made on Christmas Day. ❤️

Boil them with some bay and a couple of garlic cloves. Cool them completely. Preheat goose or duck fat, add the roasties and jiggle til they're covered. Cook at 200-220 (depending on what else in oven) until cooked.

It was as our 30th wedding anniversary yesterday and we went out for a very fancy tasting menu with paired wines.

Every morsel was delicious.
