Please give me your best vegetarian recipes that don’t include lots of prep and are healthy. I’ve been ill overXmas and have a vegetarian I’ve never met before coming for four days. I’ve got a mental block!

I make this often, with a few tweaks. I use tinned polpa tomatoes rather than fresh /grated. I use frozen chopped garlic. I miss out the rose water as I don't like it. I don't add extra chilli, the harissa I buy is spicy enough.
Soup is a complete meal in this house (maybe with bread on the side).

I am veggie and although I haven't tried the first poster's recipe, I can attest that every recipe I've tried by meera soodha has been either very nice or epic. We have three of her books.

Quesadillas using ready made tortilla wraps are quick and easy to do, can basically chuck in anything that you fancy really. Grated cheese, chopped tomatoes and (prefried) onions and mushrooms with a squirt of spicy chilli sauce are delish. Dont make them too thick or they fall apart and dont have the heat too high or the outside will get crispy quite quickly.
