How do I make soup with....

leftover fennel and broccoli? I also have potatoes, sweet potatoes, onions and garlic

The easiest and quickest way would be to chop and saute the onions and garlic, add the sliced or chopped fennel, diced potato and/or sweet potato and then add some stock (not too much - easy to add more if needed to thin it down a bit at the end, but if you want to end up with a puree you don't want it too runny). Simmer away until all the veg are soft, adding the broccoli a few minutes after everything else so it doesn't get soggy. Then liquidise. You need to taste for seasoning and adjust as necessary. I often add some lemon juice to a soup like this just before serving.

If the fennel is baked, put everything except the sweet potatoes together (judge how much of your potatoes, too*) with some watered down gravy/stock cube and crumble cheese (Stilton?) on top once blitzed.

If the fennel is raw, it will keep.

*I find roast potato skins in soup can make it a bit too sweet.
