Hello - having a bit of a panic! Cooking beef short ribs in a red wine sauce for Xmas day dinner and when we went to the butchers they'd forgotten to order the meat in, even though we'd had an order and deposit.
They had some in in luckily but I've a horrible feeling it's not enough! Feeding four adults and I've not cooked with it much for this many people previously - we have just under 1.4kg of short rib on two 'ribs'. Would anyone know if this would feed everyone? I think it will be enough but I'm spiralling at the thought of getting quantities wrong on Christmas day - my plan ATM to pad it out with some mushroom/pearl onions/pancetta if it's just a bit under! Argh!
