Blowout holiday with teens.. where?

My dc are 9 & 12 but we want to do a huge holiday with them in their teens & start saving in the new year for 2 or 3 years!
Where to go?!
Safari?

I'm in Northern Ireland so can fly from either Belfast or Dublin
