What sauce for 'pulled beef'

I fancy doing pulled beef with floury bap as a boxing day alternative. I know pulled pork and bbq sauce works well but what could I do with beef that would be just as tasty ?

I was going to say similar to @howfartospar a friend does "cow cob" and always adds grated cheese as it melts faster into the gravy , they also have a bowl of onion crispies to sprinkle on top as well as regular fried onions.

Any recipe for brisket with onion gravy would work - I do slow cooker with stock cube, white wine, celery, carrots. Then make the juices into onion gravy.

I would do something like a French dip, so beef jus and/or gravy, with fried onions and horseradish sauce.

I use a horseradish and mayo mix to taste and serve on a slice of good crusty sourdough bread.
