Luxury Sydney or Melbourne experiences

My mum and dad who are amazingly supportive and help out with my kids are spending a month in Aus and NZ in Feb.

I'd like to get them an experience whilst there as their Christmas gift. I'd looked at a private sunset champagne cruise in Sydney or a voucher for dinner at Bennelong. I really have no idea though so would love some suggestions from anyone with experience.

Looking at a budget of 500-500 GBP total and they are mid 60s (so a Sydney climb etc probably not ideal).

We just got back from Aus a few days ago. You can get the whale watching tour from Circular Quay in Sydney. You could get vouchers for a meal at the Opera Bar? It's a short walk from where the whale watching tours start/end, and it's right next to the Opera House - fantastic location. We ate there twice and it was spectacular. The big bus tour in Sydney is good. The Infinity tower looks good, but we didn't fit that in. I believe they have a revolving restaurant at the top. Wish we'd done that now. Tickets for airport lounge?
