I WFH. Bored of sandwiches. I enjoy most soups but need protein with it, any suggestions how to add it would be great. Cant face salad at this time of year.
Please share your favourite lunch that isn't a sandwich.

Just had half a pack of microwave rice (merchant and gourmet wild red and brown rice is tasty) with a fried egg, kimchi and salad. I had some avocado too so used that but this is my store cupboard lunch go to at the moment and takes five min to make

I’ve just had some microwave rice, I added chopped up leftover veg from yesterdays dinner, some chicken, and an egg which scrambled into it as it was cooking, bit of soy sauce all over it and it tuned out a bit like egg friend rice.

I often have poached eggs on toast when I want something hot but quick to make on my lunch break. Or if you want protein I would have whichever soup you fancy with a handful of nuts alongside.

smoked salmon and scrambled egg on toast / bagel

Home made carrot and lentil soup or butterbean and butternut squash - that will give you some protein. Add cheese on toast on the side if you like.

I love poached eggs on wholemeal toast for lunch - quick, healthy and good.

A medium jacket potato only takes about 10-15 mins in a microwave. You can add beans spiced up with hot sauce or Lea & Perrins, or add cheese and blast for another minute to melt it. Or cottage cheese flavoured with Italian seasoning..

Pita with falafel and humous? I'd add salad, but you don't have to.

Left overs are a great lunch when WFH.
