Got home from hol last night so nothing in and I'm in work until 6. What can I get from the supermarket on my break that I can quickly make tonight that has some goodness in it? Family of 4, 2 adults and 2 primary aged kids who aren't adventurous with food but not too fussy. What would you make?

I have two quick and easy options, which are flexible:

Option 1 is steak or chops or a fillet of fish that I fry. Served with new potatoes and steamed vegetables. Very quick and easy. But can be pricey.

Option 2: Pasta with some kind of sauce that cooks in the time it takes to cook the pasta. The three we like for this in particular are a) tomato/chorizo/aubergine b) a very easy pasta sauce using chopped sausages, fried, then add fennel seeds, lemon zest, garlic and chilli (option), Handfull of chopped tomatoes, equal amounts white wine and milk - simmer. Then a handful of frozen peas or spinach and a generous swirl of creme fraiche. Seasoned with lemon juice, salt and some parmesan. c) Or bacon, chopped broccoli/courgettes, mushrooms, garlic. Can be served as is, or with some melted cream cheese, or a tin of passata with some paprika and dried oregano and simmered for a few minutes - basically whatever you like to add a bit of moisture.

Would you cook the microwave rice before frying it?

Go to in our house is salmon/cod fillets pan fried, broccoli, peas, new potatoes, and fried tomatoes.

Or pitta bread, prawns in garlic, coriander, chili butter, with sweet potato wedges and a salad.

With both there's not really much cooking other than a bit of boiling/frying, and minimal chopping. We're a bit fish mad here though.

If they're not seafood fans, omelette/fritatta? You could make a big one with some veg in there, whatever cheese they/you will like, and serve it with new potatoes and a side salad.

Or! Probably not as technically healthy as homemade, but I'm sick and discovered that Heinz tomato soup is not only my favourite childhood food (when sick, but also for ease!) but loads of MNers! Few tins of that, and a pile of cheese on toast! Lovely and quick, so, so tasty, and you'll be passing the Heinz tomato soup baton down through the generations. 😁

Would you cook the microwave rice before frying it?

No ..I kind of break it up whilst it's in the packet.. then open and add straight to the frying pan... maybe with a tablespoon of water to help it along

Would you cook the microwave rice before frying it?

No, it's already cooked. so when you stir fry it, it heats up. Just amke sure it gets properly hot. I do this at lunch for me and DH when we're both here often. It's an excellent suggestion.
