Fucking Fishcakes.

I made them with leftover mash started a few hours ago and still haven't bloody finished. Stupidly added some of the poaching milk to the mix and of course it's too fucking wet. All the fucking herb chopping and all the different plates for egg flour and crumbs. Argh. Who the fuck has time to make these.

I made fish cakes once.

Note the once. It was a ridiculous amount of hassle.

I make them fairly often, but I use tinned salmon which makes it easier.

Put in a metal dish and bake the whole mixture . When life gives you lemons etc etc

Homemade fish cakes are lovely but time and effort makes it not worth it. Just fry them up as is OP and if they crumble apart just call it Mediterranean bubble and squeak

Aldi do very nice ones with a sauce in the middle 😉. I have a similar view on making fishcakes as Shirley Conran had regarding stuffing mushrooms.

Definitely put them in the fridge before frying. Best chill them for a couple of hours so they don't fall apart.

I don't know anyone who makes fish cakes and my friends are all really good cooks. We all have a fish cake disaster story though.

Fry 'em. Honestly, anything tastes fine if you fry it in butter.

I make salmon fishcakes by sticking a few salmon fillets and a packet of smoked salmon trimmings with a bit of spring onion or red onion, ginger and black pepper in a food processor and chopping until it's mixed together but not totally smooth, shape and stick on an oven tray and bake until solid. Sometimes I add chilli, sometimes a bit of leftover potato but not usually, they are delicious with a sweet chilli sauce. Much simpler than the faff of making potato, think I added a tin of potatoes once to bulk them out when we needed extra.
