What's the best thing to poach salmon in?

Just seeking inspiration, as I'm tired with what I normally do and have a Birthday Meal to cook tonight.

I usually do it in a mixture of water and milk with some salt and black pepper.

White wine, give it a bit of a boil with spices before putting the salmon in. When the fish is done, remove it. Strain the liquid, reduce well and add cream.

I did it in milk when the Children were small.

Usually I either use white wine or a soy/honey/chilli marinade.

I do like it poached in fizz.
