I’ve never actually pulled pork but there’s plenty of recipes online. For ham I just buy on the unsmoked round ham joints, bring it to the boil in a pan of water for about 5-10minutes (it brings the salt out) then put the in the slow cooker covered in water on low for about 8 hours for a large joint, or less on medium.

For pulled pork you want pork shoulder. Cut it into chunks so it's fits the pressure cooker. Make a spice rub of paprika, garlic, ground fennel seeds and oregano. Your can sear the meat prior to cooking for extra flavour. Quarter an onion and add a little liquid - you can use stock with a couple of bay leaves for extra flavour. Pressure cook on high for an hour and leave to naturally depressurise. Shred with two forks. It should fall apart.

To cook ham in a pressure cooker you're looking at around 15 minutes a lb at high pressure, but use more liquid. No need for salt.
