Butter Recommendations?

I prefer salted. Trying to find a decent one is proving difficult. What do you guys like to use?

If you really love your salted butter, aim for one that is 3% salt.

Isigny Ste Mere Unpasteurised Salted Butter, this one in the blue packet. And it has to be the unpasteurised one.

IMO it is hands down the best, most flavourful butter (but without any cheesy or off notes) I've ever bought from a British supermarket. Sainsbury's do it, and Ocado, but I'm not sure who else — I know my Tesco doesn't carry it.

But people's preferences differ — some people prefer cultured butter, some sweetcream, some heavily salted, some unsalted, etc., so YMMV.

Sainsburys salted, used to buy lurpak but switched when the prices went up. It's fine.

If you have time on your hands - just an hour or so - it is astonishingly easy and quite cost effective to make your own butter if you have a food processor or stand mixer. Then you can salt or flavour it just as you like. Lots of instructions on the internet but basically you just whizz the cream until it turns into something that looks like butter.

I do it every year after Xmas when the massive tubs of double cream are around - better yet when they get marked down. The bonus is you also get a load of buttermilk for baking.

Because it doesn't contain preservatives it doesn't keep for weeks. You need to put it in the freezer and get out chunks for a few days at a time.

It's also sweetcream butter, so if you're used to a stronger cultured butter taste like e.g. Anchor (IMO) it might be a bit less flavoursome than you prefer.

It should last better if you make sure you properly wash it and add sufficient salt. Butter doesn't usually contain preservatives. But if you've made a lot, then I agree it makes sense to freeze the bulk of it.

I keep mine out of the fridge in a butter dish. But my kitchen is probably the coldest room in the house. It never lasts long enough to worry about it anyway 🤣

Isigny-Ste-Mere though can't get the unpasteurised here! But the beurre de baratte with sea salt is my favourite and one of my splurges.

The key to a good spreading butter is being made from cultured cream.

I keep a butter bell on the counter for spreading and the rest of the butter is kept in the fridge. I live in a warmer climate (at least this time of year) so just putting it straight out in a regular butter dish isn't advisable.
