I used to bake a lot before I had two under the age for 3 to deal with, I absolutely love baking and I am going to get a couple of hours free to myself tomorrow and would love to bake a cake for my husband who has been having a very hard time this last while back. He's really not fussy about what type of cake he eats but I would like to make something special but not too difficult for him as a surprise. Please give me your favourite cake recipes as I really need some inspiration! 🙏🏼

This is absolutely delicious, although I leave out the raisins because I hate them and use 100g chopped pecans and 100g of chopped walnuts.

Easy Carrot Cake

You will love this moist and easy carrot cake recipe with a creamy cream cheese frosting. One of our most popular cake recipes! Read all the rave reviews!

Not a cake fan but Sophie Grigson’s Tunisian orange cake is heavenly. Sorry don’t know how to link.

When I was about 7, Blue Peter made a cake they called a New Zealand Banana Cake. I wrote it down at the time and badgered my mum to let me make it. 50 years later I'm still making it and would love to see the episode again, just because! It's definitely cake not a banana loaf. And yes, it's in Imperial units and I've never translated it to metric or electric ovens! Use 'going over', spotty bananas.

New Zealand Banana Cake
3 bananas 4oz butter/marg
2tbsp milk 4oz sugar
1tsp bicarb 6oz SR flour
2 eggs

Cream sugar and marg. Squash bananas in bowl. Mix bicarb with eggs and mix into sugar/marg mix with the bananas. Fold in the flour and milk and put in 7" prepared tins. Bake Gas 4, 45 mins.

I usually sandwich them together with plain buttercream. They come out quite moist (sorry) and flatter than you might expect. I use a potato masher to squash the bananas.

<goes off thinking she needs to buy some bananas>

Another vote for Jane's Patisseries!

I'm obsessed with her. I couldn't get baking right before I found her. Now I make these beautiful and delicious cakes without any trouble. I follow her recipes 100% and they've never let me down.

Lemon and raspberry cake was a favourite. But any are good! Also love the cupcakes and traybakes too. If you follow her on instagram she makes brilliant videos.

That Nigella chocolate cake sounds lush. Does anyone know what corn oil is though?

Fedupoftheshits · 06/09/2024 14:15

Ignore me, I've been lazy and seen they stock it on Ocado. Never heard of corn oil before!
