Chicken drumstick tea! Help!

I got some chicken drumsticks out of the freezer this morning with the vague idea of doing them with rice. But now it's getting closer to cooking time, I don't know what to do with them!

Bake them with some lemon? Take the chicken off when cooked and mix with pasta?

Just feel like it's turning into the most boring dinner ever!

[cracks knuckles]

This is my speciality.

I would marinate the chicken drumsticks with a soy sauce, honey and sesame seed marinade if your Dcs can cope with that. Then cover them with foil and cook for about 20 minutes, uncover and cook until the skin is crispy.

In the meantime, cook the rice. Once cooked just toss cooked rice into a wok with frozen peas and sweet corn, a bit of sesame oil and some sugar snap peas. In a separate pan cook on slow a beaten egg, roll up as an omelette, dice into slices and mix with the rice.

I am so glad your DD liked it. Grin

It's basically our fave and I do it at least once a week because everyone eats it, even Ds1 who is not that into food generally.
