Recipes to use up roast chicken that can be frozen

I roasted a chicken but as it’s only me who really eats it I’ve got quite a lot of chicken to get through. Does anyone have any good recipes to use up the chicken but that can also be frozen so it doesn’t all go over the 3-4 days in fridge. Thanks!

Just freeze the cooked chicken in portions. You can have cold chicken salad, or add it to a curry sauce, whenever you want.

You could freeze it in small portions just as it is, in food bags or small tubs, and then use the defrosted chicken as and when to add to vegetable soup, or in sandwiches, or add to savoury rice, curry sauce, pasta etc etc.

I'd cook up a big chicken pie mix - just a white sauce, maybe with some mustard in it, with leeks and mushrooms, then batch freeze that. You can have it as a jacket potato filling, or with pasta (if you thin it down a bit) or as a pie (keep filo pastry in the freezer, so you can just grab a couple of sheets and scrunch them up on top, or ready rolled puff).

Or you could freeze it as-is, but for me the beauty of freezing something cooked is that it's then ready to eat, rather than needing to have something done to it again!

OP said she roasted it so it must have been raw to begin with. If it was a raw chicken, frozen as raw chicken, defrosted, cooked and frozen as cooked chicken it is fine. The same with mince.

Just freeze the cooked chicken into portions and add to anything listed above. We use it in curries, pasta, sandwiches and a stir fry.

Oh thank you so much everyone some great ideas very much appreciate it. Have tried freezing it just in pieces pulled off the chicken before but it looked very freezer burned but was probably my poor technique so might try a mixture of some mixes and just freezing as is.

I've started making lasagne with pesto and leftover cooked chicken (normal recipe otherwise). We eat half of it then freeze the other half. Defrosted it cooks up pretty well. I also freeze it loose in the bag in torn pieces so that you can shake as much as you want to defrost out. The dog is the main beneficiary of this.

It needs to be packed so air can’t get at it. I like to spread chunks flat in a bag and freeze like that. Then when frozen loosen them off the bag, reduce the air and clip it shut.

When people say you mustn’t freeze something that’s defrosted, they mean ‘unless you cook it first’.

It’s fine to defrost a chicken, cook it, then freeze it.
It’s not safe to defrost and refreeze things without cooking them in between.
