Delicious low fat meal ideas

Looking for inspiration for lovely meals that are low fat but nutrient dense and delicious.

This is in the wake of a medical diagnosis that means I absolutely must eat a low fat diet, so please don't come at me with well-meaning "fat is good, it's sugar that is the problem" advice. It's not about good or bad fats, it's all fats.

I don't eat meat.

So far I've had lots of soups, salads, pulses, vegetables, tofu. I suppose I'm looking for interesting ways to eat these things to give me lots of variety. Whole foods, lots of taste.

Can't have any delicious butter, mayonnaise, cheese, cream, oily salad dressings, even avocados are out. Limited eggs. Absolutely nothing fried.

Recipes, ideas and resources welcomed!

Ratatouille- I’d batch cook a lot of this and have it with a meat substitute

oven roasted veg (it in a couple of baby potatoes)

When I had to do the same, I had a lot of veggie-based pasta sauces, usually variations of arrabbiata or tomato and roasted veg. You can - at a pinch - sauté onions in a splash of water.

Fresh herbs, spices, garlic and chilli are your best bet, replace fat with lots flavour. Lots of indian/thai/chinese/Mediterranean recipes can be adapted to use little fat but still pack a punch. You can even get vegetarian fish sauce substitute for Thai dishes now.
