How do other countries do the count and the declaration?

I hadn’t really thought about this until I fell in love with Count Binface, but I keep seeing comments about British politicians having to get up on stage in a town hall or leisure centre in the early hours and give a victory or concession speech - as if there were some other way of doing things (even if you’re not a twat like Liz Truss or George Galloway).
How else could we do things? How do other countries do election results?

One of the things I discovered about the US is that the postal votes continue to arrive several days after election day. It’s why Trump thought he was going to win states he ultimately lost.

Thanks. That does sound slightly chaotic.
Postal votes seem to be fraught with problems. There’s the risk of coercion in the home/community and then there’s the delivery. In the UK I think the candidates see the results before polling day which could risk insider trading in the betting market.
I believe parts of Switzerland experimented with making voting easier either with on line or postal voting, but participation went down because the social pressure to be seen to have actually gone to the polling station reduced.
