Your best potato salad recipe

Family BBQ weekend, there'll be a lot of us.
I know there's a ton of recipes out there but please share your favourite.
No allergies involved, I'm hoping to stumble across 'The One' 😄

DH does an amazing one with bacon and Spring onions.

It's basically new potatoes, mayo, Dijon, bacon and Spring onions plus black pepper. So delicious! We always get asked to bring it.

Plus it's healthy....it's a salad!

This is my favourite. I use the smoked polish sausages Kolbasa you can get in Lidl. It's fiddly though.

Make a vinegarette: 1 part wine vinegar 3 parts olive oil. I use a tablespoon of each and add a teaspoon of dijon mustard. Whisk to form an emulsion.

Boil little potatoes in salt water or steam. I usually do a lot as it's popular and always gets eaten. I halve them to make them bitesize unless they are very small. The chopped surface absorbs more dressing.

Slice sping onions finely add to bowl with dressing in.

I sometimes add capers to the dressing but it's not necessary. I sometimes add chopped flat leaf parsley . Just spring onion and vinegarette are my go to.

Chuck hot potatoes into dressing. Mix

Serve warm or can be eaten cold. I usually make earlier

It's a vinaigrette one like the PP recommended. Absolutely delicious and very easy to make. Lovely warm and cold later too
