What to have for evening meal in warmer days...

Hi!

Now we look like we have some warmer days coming up does anyone have any suggestions of easy meals that don't require lots of cooking over heat?

I seem to have lost all inspiration!

We are having pizzas cooked in the Ninja tonight, tomorrow pasta with prawns, then all next week salads from the fast 800 book

Ready cooked rotisserie chicken with coleslaw salad and potatoes in a lemon butter dressing is my favourite hot weather meal.
Or a few sarnies and a couple of punnets of strawberries eaten in the park

I'd happily eat salad for every meal particularly in summer but unfortunately the others in the house hold would soon moan. So I tend to do a lot of things with salad on the side. If you have an air fryer they seem to produce less heat in the kitchen and reduce the cooking time. Things like marinated chicken breasts, either butterflied or threaded on skewers. I use things like honey and mustard, tandoori paste and natural yoghurt, paprika, lime, chilli and garlic etc etc. Serve with some form of pita, wrap, cous cous or rice. Similar with fish -cod, salmon, prawns, tuna.

This morning, I marinaded lamb (leg, cut into chunks) in harissa, olive oil, cumin, smoked paprika and salt.

Going to make kebabs soon and have in flat breads with whipped feta (with mint), humous, sweet potatoe fries, tabbouleh and salad. And lots of gin.

Tomorrow is prawn and avocado salad.

I eat lots of salad in the summer and bloody love it.

Chicken kebabs cooked in the air fryer served in a flatbread with salad. Or serve with frozen chargrilled veg you've previously cooked - just bung in the oven then add olive oil, lemon juice and chopped herbs and leave to cool. Serve at room temperature.

I know this is not a weather thread but I’d love to have it hot enough to not want to cook! Here ( near Manchester) it has been warmer but not really heating up the inside of my house!

However, being hopeful for this week, I’ve planned a few meals using chicken pieces that I’ll batch cook. One where I warm up a garlic baguette sliced lengthways with a layer of grated cheese inside to seal the bottom, then mix some sliced chicken with cream cheese and some chilli sauce, cover with pre cooked bacon and more cheese and drizzle more chilli sauce over the top. Only takes a few minutes to prepare then I can pop it in the air fryer or over to cook the bread.

Another meal will be some cold shredded chicken with Greek salad ( feta cheese, onion, olives, tomatoes and peppers) in either a wrap or on top of some flat bread. I will then heat up the rest of the chicken in a white sauce and whatever I fancy from the fridge, possibly just cheese and mushrooms, and use it to top a jacket potato. I’ll cook the potato in the microwave until almost cooked then pop in air fryer for 5 mins with the sauce on to crisp it up. I’ll probably have this with hot roasted red peppers also cooked in the air fryer.

I live alone so for the rest of the week I’m going to be creative with two small salmon steaks which are in my freezer, one possibly hot with a jacket potato and frozen corn on the cob then the other cold chopped up with salad on top of a bagel.

i have just had a food deliver today so will be having fresh seasonal fruits for dessert most days, I’ve been naughty and got both double cream and ice cream to go with it!

I will be eating out two days next week so that’s the next 6 or 7 days sorted!

Chicken Caesar salad and Salade Niçoise are amongst my summer favourites.

I also like poached salmon fillets cold with avocado or cucumber or tomato salad, I make a sauce with yoghurt and finely chopped watercress for an extra flavour.

If you want something a bit more substantial, try Russian style potato salad with added beetroot, chickpeas and chopped ham or bratwurst etc.
