Lemon Pavlova Help!

I am looking for a lemon pavlova recipe… please help

My husbands step mother makes a lovely lemon pavlova. It’s my husband’s favourite dessert. She doesn’t share recipes, I have tried for years to get various ones and she tells you how to make it but doesn’t really give enough detail. They are mostly delia or nigella ones

My husband hasn’t been invited to any family events since his father passed away 7 years ago, so is really missing it.

I really want to have a go at making it for him. I have scoured the internet and my mum’s 1970 Delia books but to no avail. (I have found recipes but not the right one). If anyone has one tucked away up their sleeve they are happy to share, I would be very grateful.

Does it have to be exact copy? Make your own - Nigella makes a lovely easy to follow lemon pav. Just google it. Her recipes never fail for me, esp her puds. It may even trump your step mum in laws 🤞🏻😂

When you say lemon pavlova, what exactly is it? A regular pavlova is a meringue mix (egg whites + sugar + vinegar) that's cooked in such a way to give it a crisp meringue outside with a marshmallow-y inside, which is then topped with whipped cream and fruit. What part of this is lemon - the meringue, the topping, or something else?

The nigella one online is the one I am planning on trying if I can’t find a better one, my SMiL’s has 2 layers of meringue

It’s 2 layers of meringue with a lemony creamy filling

Delia did a Apricot Hazelnut Meringue cake, like a sponge cake but made of meringue. The meringue is baked in sponge tins.
I do have a recipe for a passion fruit curd pavlova that is actually 3 discs of meringue if you want a recipe for meringue discs?

Oh Delia's apricot hazelnut meringue! Mum used to make it. Was amazing, hunting for the recipe now!

You could try looking for vacherin recipes. Vacherins have 2 layers of meringue with the filling sandwiched between.

The trick to a good pavlova is to make sure the sugar is completely dissolved into the egg whites (and yes to cornflour). You need to whisk until the mixture is glossy, and when you rub a bit between your thumb and finger, there is no gritty feeling. That, and a scrupulously clean oven, meringue is a bugger for picking up lingering oven odours.

I would make one by the basic delia pavlova (eggs and sugar). When cold whip a pot of double cream til its stiff. Then gently stir in a couple of tablespoons of lemon curd. Maybe decorate with candied lemon slices

No idea, I have tried for the last 20+ years to ask for recipes, she describes how they are made and says she will write them out for you but never does 🤷‍♀️

You'll have to have a q and a session with you with pen poised. Or record her describing it and ask her the bits you need explaining further.

What does she use for the filling? (Can you tell I'd be giving her the third degree?Grin)

I'd do this too but also add a good grating of lemon rind into the cream for extra lemonyness. A bit of limoncello added to the whipped cream could also work.

Final product! Tasted amazing but the filling was too creamy, definitely going to question SMIL a bit more when we next meet up
