I freeze curry and satay made with coconut milk all the time with no issues @RosesareSublime 😊

This is a favourite in our house. I usually do a big batch with turkey sausages and then freeze in portions.

Vegetarian chilli is another favourite.

Slow Cooker Sausage Casserole

With a rich tomato and bean sauce with added veggies, this Slow Cooker Sausage Casserole is a hearty midweek dinner.

oh I also made a large batch of chicken fajitas this week and put two portions in freezer bags for another time.

We generally have variants of:

Bolognese
Tomato veggie pasta sauce
Meatballs
Beef chilli
Mixed bean/veggie chilli
Curries (chicken, veggie, kheema)
Chicken cacciatore
Chicken chasseur

I also freeze chicken chopped and in Cajun spices so I can make quick fajitas.

Also freeze roast meat in gravy for a quick mid-week roast/dinner.

I've not tried freezing coconut milk based curries but you can certainly freeze coconut milk so I expect it would be fine.

If your family like fish cakes you could make a batch of those and freeze.

I've got lots it spag bol and meat balls
I'm so sick of wondering what to cook or having to make it from scratch.

We don't have a slow cooker, well we used too and maybe it was faulty as I always found it disappointing.

Roast meat and gravy sounds good.
Fajita I always use a el lasso pack?

Chicken chasseur sounds good, stuff like that.
