Well I won’t be doing that again - baking fail

Blueberry muffins are completely flat and have spread out. The blueberries have sunk to the bottom. The top half came off- completely blueberry free and a gloopy pile of blueberries at bottom stuck to paper.

Good idea. Some baking fails are delicious (if not exactly pretty…)

What recipe did you use? If you're using any fruit, it helps to stop it sinking to the bottom of you coat it in a bit of the flour before adding at the end.

I have tried coating fruit ( glacé cherries and blueberries) in flour but they still sink to the bottom. I have also tried putting a layer of plain sponge mixture in the bottom of the tin, then a layer of blueberries then topped with the rest of the mixture - still all the fruit sunk!

Luckily other cakes are more successful as I love baking, my mango cake was very popular at my WI last week!

Glace cherries are best if you pour boiled water over them to remove the syrup before you bake with them.

I used the below recipe - but caster sugar - and I didn’t have any salt - used a low sodium salt alternative I have.

Mango cake does sound good. Im a bit put off though - I could have bought some nice muffins and would have cost less!

You Will Need
1 ½ cups (195g) all-purpose flour
3/4 cup (150g) granulated sugar, plus 1 tablespoon for muffin tops
2 teaspoons baking powder
1/4 teaspoon fine sea salt
1/3 cup (80ml) neutral-flavored oil, like safflower, avocado, or vegetable oil
1 large egg
1/3 cup (80ml) milk or non-dairy milk, use more as needed
1 ½ teaspoons vanilla extract
6 to 8 ounces fresh or frozen blueberries, generous 1 cup

I’ll dig out the recipe, it’s basically a Madeira sponge mix with a little more flour to counteract the mango purée that is in it.

It sounds like the temperature might have been too low. You can buy a little thermometer for your oven, they're often off by a lot.

Definitely still eat them, who cares (apart from the WI) what they look like
