Chef knife/pan recommendations!

My DP is an incredible cook and is very passionate about it. Not professionally trained at all, self taught through YouTube/cooking shows etc but he absolutely loves it.

It's his birthday in a few weeks and I'm looking to get him some really nice chefs knives (set perhaps) and maybe some nice pans - he has specifically mentioned stainless steel in the past.

I've no idea where to start - any recommendations please?!

Most professional chefs will use carbon steel for frying - and they've become much more popular at home. They're quick to heat up; robust; don't have non-stick that degrades but do need a little bit of looking after (seasoning before first use and usually a good idea to re-oil after cooking) and can't go in dishwasher (just wash with water - no washing up liquid!)

De Buyer are one of the best brands but even the procook ones are very good.

I've always been keen on Global knives but I'm sure there are plenty of good ones out there!
