1x red onion finely diced
Tablespoon of ginger/garlic puree or fresh equivalent grated
tablespoon of ghee or butter
Mild curry powder
2 grated carrots
1 grated green apple
Chicken/veg stock cube
Cornflour
S&P
Sweat the onion in the ghee until it’s soft and slightly browned, add the ginger and garlic and fry off for a couple of mins. Stir in the curry powder and fry gently for 2 mins.
Take off heat and grate in the carrots and apple, fry gently for 3 mins. Add around a pint of chicken stock and let bubble for 10 mins until carrot and apple are soft.
Mix 1 tablespoon of cornflour with cold water to make a slurry and pour into curry sauce. Stir until thickened. Add S&P to taste. Done!!!
