Talk to me about your favourite salads.
I've just got home from work and am too hot and tired to think what to eat so just raided the fridge of the weekend's BBQ leftovers.
Here's my not quite Greek Salad (no olives and not nearly enough feta sadly 😕)

Oh and can someone share the recipe of the infamous 'Mumsnet Massive Salad' please?!

My favorite salad: tabbouleh

My version of the MN massive salad:
Black beans, chickpeas, red cabbage, spring onions, peppers, cucumber, tomatoes, parsley, mint;
dressed in lemon juice, balsamic vinegar, ACV and EVOO, plus S&P and a few chili flakes.
alternative (Asian) dressing: ginger, garlic, lemon juice, soy sauce, a tsp honey, a little fish sauce, chili paste - and fresh coriander or (Thai) basil instead of parsley & mint.

If you search online (YouTube, Instagram, tiktok) for "the salad lab" she is fantastic and makes so many fabulous salads, they're delicious! I think there's also a book from her, but I really really rate her salads.

I could live off Panzanella.

Red wine, olive oil and Dijon vinaigrette
finely sliced red onions, 2 garlic cloves
cucumber, lots of types of tomatoes, all cubed
pickled bell peppers with some of the brine if you like
Dry bread (microwave fresh if you don’t have it) cubed.
Olives, crushed anchovies and salted capers optional.
Oregano and fresh basil.
Salt and black pepper
Mix up and leave in the fridge to soak.

I’m serving it tonight for 4 with cheesy garlic bread and less bread in the salad.

Mine is really simple. Chick peas cucumber pepper tomato feta cheese. Olive oil. Lemon and fresh rosemary dressing

I regularly make all of these

Radish & cucumber salad with mint, lime & toasted cumin seeds

Sweet potato, chickpea and feta salad with tahini dressing

Vietnamese rice noodle salad

I love this Vietnamese salad, @AtleastitsnotMonday - I often make a variation of this.

NB: I usually also add rice wine vinegar to my Asian dressing - see my post above.
