Egg/beans/tinned spaghetti on toast.
Fishfingers/scampi, frozen chips and frozen peas/sweetcorn from the freezer.

Cully and sully mushroom risotto for me and a homemade burger and chips for ds. I don't eat meat and cba cooking twice so I'm being lazy with my risotto

Chicken burgers (done in the airfryer so super quick too)with salad. Very lazy tea here as it's so hot noone really wants a 'big tea'

Fishcakes, new potatoes and asparagus.

Fishcakes done in the air fryer and all the veg steamed in the microwave so I don't have to have a pan boiling or the oven on in this weather.

What I really fancy though is a ploughmans. Some cheese, sliced baguette, pork pie, chutneys, boiled egg, slice of ham, salad, coleslaw etc and a pint of beer. Maybe at the weekend!

I would love a good fish cake recipe. I find shop bought are underwhelming compared to eating out and my homemade attempts are rubbish

Ended up doing an Aldi smash and grab; chicken thighs, parmentier potatoes, salad yogurt dip and corn fritters. Bit of a mess but the toddler actually ate, which is always a win Grin
