Do any of the superfoods have evidence behind them?

Or is it 99% hype? Trying to think of examples, manuka honey, berries. I know there are many more but my brain is half-dead today

Yes, lots do. Go to the pubmed website and put in blueberries (or other superfood) and lots of scientific papers come up.

Not enough to take the word "may" out any article.

If they were that fantastic then doctors would stop prescribing and send patients to the supermarket to buy beetroot juice, blueberries, ginger, tumeric etc.

Yes so called superfoods can help and support health, especially prevention, within the context of a healthy lifestyle.
