A. Everyone's participation and enthusiasm were outstanding
B. Everyones participation and enthusiasm were outstanding

It's 'was' because in this case the participation and enthusiasm are parcelled together as the singular.

If they were separate items it would be 'were' e.g everyone's cakes, biscuits and sandwiches were outstanding.
