PLEASE HELP! Veggie recipe for 9 people for tomorrow

I don't have loads of cooking time. 9 people tomorrow.
Lots of fussy eaters

No curry
No chilli
No shepherds pie
Puff pastry is good!

ANY IDEAS PLEASE? I'd be so grateful

Do you have access to plenty of ingredients?

What about a tomato puff pastry tart? Or 2 tarts, one with tomatoes (and mozzarella and basil, 1 with red onion and goat's cheese, a mixed bean salad and a green salad.

Mixed bean salad is super easy - drain a tin each of chickpeas, kidney beans and cannelini beans, sweetcorn, add chopped Bell pepper and spring onion, celery or radish, and make a dressing.

Cheese board, with French bread, crackers, olives, salad and chutneys.
Mushroom risotto.

Cheesy veg pie / kind of like cauliflower cheese with pastry - any kind of frozen veg works and salad plus garlic bread would work

Faced with fussy eaters and not much time to cook, I tend to go with fajitas. Make (or buy) a mild spice mix which can be used for various things - chicken/beef/prawns for any meat eaters and a mix of peppers, mushrooms and onions for the veggies. The cooking time for both is about 10 mins. You can have both pans on the go at the same time.

Make a homemade salsa (tomatoes, red onion, garlic, coriander, green chillies and lots of salt and lime).

Buy some soured cream.

Make some guacamole or just slice up some avocados.

Refried beans take 20 mins to make from scratch (if you can be bothered).

I sometimes make rice.

Chop up some salad - cucumber and lettuce. Open a can of sweetcorn.

Then let everyone help themselves. They can either make fajitas in wraps or rice bowls and they can pick and choose what to include.

It sounds like a lot to do but I can usually do the whole thing in about an hour.

Salmon wrapped in puff pastry
Paella ( nice and easy. With fish or without) , bread, olives, cheese etc
veg sausage and mash with onion gravy ( perhaps crispy onions on top )
fajitas - lots of peppers, onion, nice dips, enchiladas
Vegetable wellington ( sweet pot, squash)
Ratatouille

This is delicious!! You can use normal cheese so it's veggie, not vegan.
