I interviewed for a job last week Monday. I think it went well, if i say so myself. I was told i'll hear back from them this week.

I am trying to compose an email to the recruiter tomorrow as I don't think they'll be ringing me today, seeing as it's closing time.

What's the best way to enquire about the outcome without sounding too desperate?

Don't write 'potentially join'! It's a split infinitive.
There are other bits I would never write (hope this finds you well) but the split infinitive just makes me cringe.

Agree don’t go with ChatGPT version. You can take small bits from it but it would make you sound like a twat.

Something along the lines of " further to my interview with you/your panel on 3 June for position of chef, I would be grateful for an update. I look forward to hearing from you. Kind regards"

Don't be flowery and emotive

I'm following up on my recent interview with XYZ co; please could you let me know if there's an update, as I was told I'd hear by the end of this week?

Urgh don't send this, you'll blow any chance you have.

If they said they'd contact you this week, don't chase this week. If you've got the job they'll be in touch. If you have to, chase after their deadline, I.e. next week.

Wait until Monday surely? It’s only 6am on Friday.
