Does anyone have a tried and tested vegetable curry that doesn't involved chickpeas?

I love a curry and a love vegetables but have yet to make a vegetable curry that tastes nice. I tried a chickpea one once and didn't like the taste of chickpeas in it. I hardly eat any meat and would like to reduce it even further.

I went to a Hare Krishna event a couple of years ago and tasted the most amazing curry ever.

Any good recipes or tip? I've tried yellow lentil dahl as well and not keen on that.

Any help much appreciated.

We had Nutella's butternut squash and sweet potato curry last night. I thought it was very nice.

The one thing to remember is that a curry needs salt.

So season it well.
